  • 1 teaspoon vanilla extract
  • Pinch of salt
  • About 2 tablespoons rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, beat eggs until slightly frothy. Add buttermilk, vegetable oil, vanilla extract, and green food coloring; mix well until smooth and bright green.
  4. Slowly pour wet mixture into dry ingredients while mixing on low speed. Mix just until combined; avoid overmixing.
  5. Spoon batter into each cupcake liner about ⅔ full using a small ice cream scoop for even portions.
  6. Bake for 18-22 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  7. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Beat cream cheese and butter together until creamy and smooth (3-4 minutes). Gradually add powdered sugar, vanilla extract, and salt; beat until fluffy and spreadable.
  9. Once cupcakes are fully cooled, frost generously with cream cheese frosting.
  10. Sprinkle rainbow sprinkles on top while frosting is still soft so they stick well.
