This frozen yogurt bark is a quick, healthy, and customizable snack featuring creamy Greek yogurt, vibrant fruit, and crunchy toppings. It’s perfect for kids and adults alike, and makes a refreshing treat for any occasion.

  • 2 cups plain Greek yogurt (full-fat or 2%) or coconut yogurt for dairy-free
  • 2–3 tablespoons honey or maple syrup, to taste
  • 1 teaspoon pure vanilla extract
  • 1/2 cup fresh strawberries, sliced (or frozen, thawed and patted dry)
  • 1/2 cup blueberries (fresh or frozen)
  • 1 small kiwi, peeled and sliced
  • 1/4 cup mango chunks (optional)
  • 1/4 cup pomegranate seeds (optional)
  • 1/3 cup granola (chunky clusters preferred)
  • 2 tablespoons mini chocolate chips (preferably dark chocolate)
  • 2 tablespoons chopped nuts (almonds, pecans, or pistachios)
  • 1 tablespoon chia seeds or hemp seeds (optional)
  • 2 tablespoons unsweetened shredded coconut (optional)

Instructions

  1. Line a baking sheet (about 9×13 inches) with parchment paper. Ensure it fits flat in your freezer.
  2. In a medium bowl, mix Greek yogurt, honey or maple syrup, and vanilla extract until smooth. Taste and adjust sweetness if needed.
  3. Pour the yogurt mixture onto the lined tray and spread evenly to about 1/4 inch thick.
  4. Scatter sliced strawberries, blueberries, kiwi, mango chunks, and pomegranate seeds evenly over the yogurt. Press gently so the fruit sticks.
  5. Sprinkle granola, mini chocolate chips, chopped nuts, chia seeds, and shredded coconut evenly over the top. Press toppings in gently.
  6. Freeze the tray flat for at least 3 hours, or until completely firm. Overnight is ideal.
  7. Once set, lift the parchment paper and break the bark into pieces. Let sit for 2–3 minutes if too hard to cut.
  8. Serve immediately or store pieces in an airtight container or zip-top bag in the freezer for up to 2 weeks.

For best results, use thick Greek yogurt and pat fruit dry to avoid icy spots. Press toppings in gently so they stick. Customize with your favorite fruits and crunchy toppings. For a marbled effect, swirl in a spoonful of berry jam before freezing. Let bark sit at room temperature for 1–2 minutes before breaking for cleaner pieces.
