Fresh Yogurt Popsicles with Berry Swirls

These fresh yogurt popsicles with berry swirls combine creamy full-fat Greek yogurt with a tangy, sweet berry puree for a refreshing and easy homemade summer treat.

Ingredients

  • 2 cups (480 ml) full-fat Greek yogurt
  • 1/4 cup (60 ml) honey or maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 g) fresh berries (blueberries, raspberries, or strawberries), washed and hulled if needed
  • 1 tablespoon (15 ml) lemon juice
  • 2 tablespoons (30 ml) water
  • Optional: a few mint leaves, finely chopped
  • Optional: coconut yogurt (for dairy-free version)

Instructions

  1. Prepare the Berry Puree: Place 1 cup of fresh berries, 1 tablespoon lemon juice, and 2 tablespoons water into a blender or food processor. Blend until smooth but still slightly textured. Taste and add a teaspoon of honey if you prefer it sweeter. Set aside.
  2. Mix the Yogurt Base: In a medium bowl, combine 2 cups Greek yogurt, 1/4 cup honey or maple syrup, and 1 teaspoon vanilla extract. Whisk gently until smooth and creamy. Fold in finely chopped fresh mint leaves if desired.
  3. Assemble the Popsicles: Spoon a few tablespoons of yogurt base into each popsicle mold. Add a small spoonful of berry puree on top. Use a skewer or the back of a spoon to gently swirl the berry puree through the yogurt without over-mixing. Repeat layers until molds are full, finishing with a swirl on top.
  4. Freeze: Insert popsicle sticks if molds don’t have them built-in. Freeze until solid, at least 4 hours but ideally overnight.
  5. Unmold and Serve: Run the molds briefly under warm water to loosen. Enjoy immediately or store in an airtight container in the freezer for up to 1 week.

Notes

Use full-fat Greek yogurt for best creamy texture. Avoid over-mixing the berry puree to keep pretty swirls. Run molds under warm water to easily unmold popsicles. Frozen berries can be used but thaw slightly before pureeing. For dairy-free, substitute Greek yogurt with coconut or almond milk yogurt.
