A refreshing and easy-to-make summer drink combining juicy watermelon, fresh mint, and zesty lime for a bright, cooling beverage perfect for hot days.

Ingredients

Scale
  • 4 cups (600g) seedless, ripe watermelon chunks, peeled and diced
  • 1012 fresh mint leaves, washed and gently bruised
  • Juice of 2 medium limes (about 3 tablespoons or 45ml), freshly squeezed
  • 2 cups (480ml) cold filtered water
  • 12 tablespoons (15–30ml) honey, agave syrup, or simple syrup (optional)
  • Ice cubes, as needed for serving

Instructions

  1. Remove the rind and cut about 4 cups (600g) of watermelon into chunks. Ensure the watermelon is ripe and juicy.
  2. Place the watermelon chunks in a blender. Add the bruised mint leaves and blend on high until very smooth, about 1–2 minutes.
  3. Optional: Pour the blended mixture through a fine mesh strainer into a pitcher to remove pulp and mint stems, pressing with a spatula.
  4. Stir in the freshly squeezed lime juice and sweetener. Taste and adjust sweetness as needed.
  5. Pour in 2 cups (480ml) of cold filtered water and stir gently to combine.
  6. Refrigerate for at least 30 minutes to chill and let flavors meld. Serve over ice cubes, garnished with fresh mint or a lime wheel.

Notes

Use fresh lime juice for best flavor. Bruise mint leaves gently to avoid bitterness. Straining is optional depending on preferred texture. Adjust sweetener based on watermelon sweetness. For a fizzy version, replace some water with sparkling water. Can be made ahead by keeping watermelon puree and lime-sweetener mixture separate until serving.
