Instructions

  1. Prep the Veggies (10 minutes): Rinse and dry baby spinach leaves and herbs thoroughly. Slice cucumbers thinly (about 1/8 inch thick). Trim snap peas by snapping off ends and strings. Rinse grapes and pat dry.
  2. Prepare the Dips (10 minutes): Blend 1 cup (8 oz) cottage cheese with 1 tablespoon chopped fresh chives, 1 teaspoon dill, and zest of half a lemon until smooth but textured.   3. Slice Cheeses and Meats (5 minutes): Cut sharp cheddar into bite-sized cubes or thin slices. Slice goat cheese log into rounds or dollop soft goat cheese with a spoon. Arrange thin slices of salami or soppressata on a plate.
  4. Arrange the Board (15 minutes): Place bowls of dips and olives on the board. Fan out cucumber slices and scatter baby spinach leaves as a base. Add clusters of grapes and snap peas around dips.
