  • 1 cup sweet corn, fresh, canned, or frozen (thawed)
  • 2 cups diced tomatoes (preferably Roma)
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers, diced (mix of red, yellow, and green)
  • 12 jalapeños, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: crumbled feta or queso fresco
  • Optional: pinch of cumin or chili powder
  • Optional: diced mango or pineapple

Instructions

  1. Rinse and drain the black beans and corn. Dice the tomatoes, onion, bell peppers, jalapeños, avocado, and cilantro. Set them aside.
  2. In a large mixing bowl, add the black beans, corn, diced tomatoes, red onion, and bell peppers.
  3. Stir in the jalapeños and cilantro. Adjust the amount of jalapeño based on your desired level of heat.
  4. Drizzle the olive oil and freshly squeezed lime juice over the mixture. Sprinkle with salt and pepper, then toss everything gently to combine.
  5. Add the diced avocado last to prevent it from getting mushy. Gently fold it into the mixture.
  6. Give it a taste and adjust the seasoning if needed. Add more lime juice or salt, depending on your preference.
  7. Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld together.
  8. Serve cold with tortilla chips, over grilled chicken, or on a bed of greens for a refreshing salad.
