Instructions

  1. If pumpkin seeds, nuts, or sesame seeds aren’t pre-toasted, place them in a dry skillet over medium heat. Stir frequently for 3–5 minutes until fragrant and lightly browned. Remove from heat and set aside to cool.
  2. Brush each slice of bread lightly with olive oil on both sides. Toast in a grill pan or toaster until crisp and golden, about 3–4 minutes per side if grilling, or just until toasted if using a toaster.
  3. In a medium bowl, scoop out the avocado flesh. Add fresh lime juice, salt, and pepper. Mash with a fork or potato masher until desired consistency is reached (chunky or smooth). Taste and adjust seasoning as needed.
  4. Spread a generous layer of mashed avocado evenly over each slice of toasted bread.
  5. Sprinkle your choice of toasted pumpkin seeds, crispy shallots, nuts, sesame seeds, and radish slices evenly on top. Add cilantro or parsley leaves for freshness if desired.
