Fluffy Spring Layer Cake with Fresh Strawberry Glaze

  • Β½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ΒΎ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • 2 cups (about 300g) fresh strawberries, hulled and sliced
  • Β½ cup (100g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons water
  • 1 teaspoon cornstarch (optional)
  • About 2 cups whipped cream or frosting of choice

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  3. Using an electric mixer, beat the softened unsalted butter and granulated sugar on medium-high speed for about 4-5 minutes until pale and fluffy.
  4. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next. Add vanilla extract with the last egg.
  5. Reduce mixer speed to low. Add the flour mixture in three parts, alternating with the whole milk in two parts (flour-milk-flour-milk-flour). Mix just until combined.
  6. Divide batter evenly into prepared pans, smoothing tops with a spatula. Tap pans lightly to release air bubbles.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  8. Prepare the strawberry glaze: In a medium saucepan, combine sliced strawberries, sugar, water, and lemon juice. Cook over medium heat, stirring occasionally, until strawberries break down and mixture thickens, about 10-12 minutes.
  9. For thicker glaze, mix cornstarch with a tablespoon of cold water and stir in; cook for another 2 minutes. Let cool to room temperature.
  10. Assemble the cake: Place one cake layer on serving plate. Spread a generous layer of whipped cream or frosting, then spoon over a layer of strawberry glaze.
  11. Top with second cake layer and repeat. Finish with a final layer of glaze and a dollop of whipped cream or extra strawberries for garnish.
  12. Refrigerate for at least 1 hour before serving to let flavors meld and glaze set.

Bring eggs and milk to room temperature before mixing. Cream butter and sugar thoroughly for fluffier cake layers. Avoid overmixing after adding flour to prevent toughness. Chill strawberry glaze if too runny. Let cake layers cool completely before assembly to prevent frosting melting.
