  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 8 or 9-inch cake pan with butter or non-stick spray and lightly dust with flour or line with parchment paper.
  2. In a medium bowl, whisk together dry ingredients: all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, mixing well after each addition until fully incorporated.
  5. Mix in vanilla extract until combined.
  6. With mixer on low, alternate adding the flour mixture in three parts and the milk in two parts, starting and ending with the flour mixture. Mix just until combined; do not overmix.
  7. Pour batter into the prepared pan and smooth the top with a spatula. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the cake rest in the pan for 10 minutes, then turn out onto a cooling rack to cool completely before frosting.

Notes

Use room temperature ingredients for best results. Do not overmix batter after adding flour to keep cake tender. Tent with foil if cake browns too quickly. Fresh baking powder is essential for proper rise. For dairy-free, substitute butter with coconut oil and milk with almond or coconut milk. For gluten-free, use a 1:1 gluten-free baking blend and add extra baking powder.
