  • 1 tablespoon milk (whole or 2%, can substitute dairy-free milk)
  • 1 tablespoon unsalted butter
  • Pinch of salt
  • Freshly ground black pepper to taste
  • Optional fillings: shredded cheese (cheddar, mozzarella, or favorite), chopped herbs (chives, parsley), diced veggies (bell peppers, mushrooms), cooked bacon bits

Instructions

  1. Crack 3 large eggs into a mixing bowl. Add 1 tablespoon of milk, a pinch of salt, and freshly ground pepper. Whisk vigorously for 1-2 minutes until pale yellow and slightly frothy.
  2. Heat an 8-inch non-stick skillet over medium heat. Add 1 tablespoon of unsalted butter and let it melt completely, swirling to coat the surface evenly. Butter should foam but not brown (about 1-2 minutes).
  3. Pour the egg mixture into the hot skillet. Let it sit undisturbed for about 20 seconds until edges start to set.
  4. Using a silicone spatula, gently push the cooked edges toward the center while tilting the pan to allow uncooked eggs to flow to the edges. Repeat 2-3 times over 1-2 minutes.
  5. Once eggs are mostly set but still slightly runny on top, sprinkle optional fillings over half the omelette.
  6. Carefully fold the omelette in half using the spatula and cook for another 30 seconds to 1 minute until the inside is soft and fluffy.
  7. Slide the omelette onto a plate and serve immediately, optionally garnished with extra herbs or flaky sea salt.

Notes

Use room temperature eggs for better fluffiness. Whisk eggs vigorously to incorporate air. Cook over medium heat to avoid browning or toughening. Gently fold rather than stir aggressively. Butter should foam but not brown. Optional fillings can be added when eggs are mostly set but still runny on top.
