  • 1 tablespoon unsalted butter
  • 1/4 cup shredded cheddar, mozzarella, or gruyere cheese
  • 2 tablespoons chopped fresh parsley, chives, or dill
  • Salt and freshly cracked black pepper to taste
  • Optional: pinch of garlic powder or finely chopped green onions

Instructions

  1. Crack 3 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk or cream. Whisk vigorously for about 2 minutes until pale yellow and slightly frothy.
  2. Chop 2 tablespoons fresh herbs finely and shred cheese if not pre-shredded. Set aside.
  3. Heat a non-stick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the surface without browning.
  4. Pour in the egg mixture. Let sit undisturbed for about 30 seconds until edges start to set. Gently push cooked edges toward the center with a spatula, letting uncooked eggs flow underneath. Repeat for 1-2 minutes.
  5. When eggs are mostly set but still slightly runny on top (about 2-3 minutes), sprinkle shredded cheese evenly over one half of the omelette. Add chopped fresh herbs on top of the cheese.
  6. Carefully fold the omelette in half using a spatula. Cook for another 30 seconds to 1 minute until cheese melts and inside finishes cooking without drying out.
  7. Slide omelette onto a warm plate. Season with salt and freshly cracked pepper to taste. Serve immediately.

Whisk eggs thoroughly to trap air for fluffiness. Use medium-low heat to avoid rubbery eggs. Add cheese when eggs are slightly runny on top for creamy melt. Butter is preferred over oil for flavor and browning. For dairy-free, substitute milk and cheese accordingly. Leftovers can be refrigerated up to 24 hours and reheated gently.
