  • 2 large eggs, room temperature
  • 1 teaspoon salt
  • 2 tablespoons honey
  • For cinnamon butter spread:
  • 1/2 cup unsalted butter (115g), softened
  • 1/4 cup powdered sugar (30g)
  • 1 tablespoon ground cinnamon
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm milk (110°F / 43°C), sugar, and instant yeast. Stir gently and let sit for 5 minutes until foamy.
  2. Mix wet ingredients: Add melted butter, honey, eggs, and salt to the yeast mixture. Whisk until well combined.
  3. Add flour gradually: Slowly incorporate the flour, one cup at a time, mixing with a wooden spoon or mixer on low speed. When the dough becomes too stiff, switch to kneading by hand.
  4. Knead the dough: Turn dough onto a floured surface and knead for about 8-10 minutes until soft, smooth, and slightly tacky but not sticky. If too sticky, add a tablespoon of flour at a time.
  5. First rise: Place dough in a greased bowl, cover with a towel or plastic wrap, and let rise in a warm spot for 1 hour or until doubled in size.
  6. Shape the rolls: Punch down the dough gently and divide it into 12 equal pieces (about 2 oz / 56 g each). Shape each into a smooth ball by pulling the edges underneath and pinching at the bottom.
  7. Second rise: Arrange rolls on a greased baking sheet or pan, spaced about 1 inch apart. Cover and let rise for another 30-40 minutes until puffy.
  8. Bake: Preheat oven to 350°F (175°C). Bake rolls for 20-22 minutes until golden brown on top. They should sound hollow when tapped gently.
  9. Make cinnamon butter: While rolls bake, blend softened butter, powdered sugar, cinnamon, honey, and vanilla in a small bowl until creamy.
