  • Pickled jalapeños
  • Soft corn or flour tortillas (8-10 inches), warmed

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat. Sauté chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
  2. Add ground beef or shredded chicken, breaking it apart with a spatula. Cook until browned but not dry, about 6-8 minutes.
  3. Sprinkle chipotle chili powder, cumin, smoked paprika, oregano, salt, and pepper over the meat. Stir well to coat evenly.
  4. Pour in broth to keep the mixture moist. Reduce heat to medium-low and simmer gently for 10 minutes, stirring occasionally.
  5. While meat simmers, chop lettuce, tomatoes, onions, and cilantro. Shred cheeses and slice olives and jalapeños. Mash avocados with lime and salt for guacamole. Arrange toppings in bowls.
  6. Stack tortillas and wrap in a damp kitchen towel. Heat in microwave for 30-45 seconds or warm each in a dry skillet for 15 seconds per side until soft.
  7. Set up the taco bar buffet-style with tortillas, meat filling, and toppings. Provide spoons, tongs, and plates for assembling tacos.
  8. If meat seems dry, add a splash more broth or olive oil. For too-spicy filling, add extra sour cream or guacamole to mellow heat.
