  • 3 tablespoons gochujang paste
  • 2 tablespoons soy sauce (preferably low sodium)
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar

  • 1 teaspoon freshly grated ginger
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt (to taste)
  • Optional garnishes: toasted sesame seeds, thinly sliced green onions

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the wings dry with paper towels to remove excess moisture. Season lightly with salt and black pepper, tossing to coat evenly.
  3. Arrange wings on a wire rack over a rimmed baking sheet to allow air circulation for crispiness.
  4. Roast wings for 35-40 minutes, flipping halfway through, until golden brown and firm to the touch.
  5. While wings roast, whisk together gochujang paste, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and toasted sesame oil in a bowl until smooth and shiny.
  6. Once wings are cooked, transfer them to a large bowl. Pour the warm glaze over the wings and toss thoroughly to coat each piece.
  7. Return glazed wings to the baking sheet or keep them in the bowl. For extra sticky wings, broil for 2-3 minutes, watching closely to avoid burning.
  8. Finish with a sprinkle of toasted sesame seeds and sliced green onions. Serve immediately while sticky and hot.

Notes

Pat wings dry before seasoning to ensure crispy skin. Use a wire rack for even roasting and crispiness. Broil briefly after glazing for extra sticky wings but watch closely to avoid burning. For gluten-free, substitute soy sauce with tamari. Maple syrup can replace honey for a different sweetness. Leftovers reheat best in the oven to maintain crispiness.
