  • 1 lb lean ground turkey (93% lean)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 cup bell peppers (red, yellow, or green), chopped
  • 1 medium zucchini, diced
  • 1 (14-ounce) can crushed tomatoes
  • 1 tbsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey, break it up with a wooden spoon, and season with a pinch of salt and pepper. Cook for 5-7 minutes until browned and cooked through. Remove the turkey from the skillet and set aside.
  2. In the same skillet, add another tablespoon of olive oil. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and stir for 30 seconds until fragrant.
  3. Add the chopped bell peppers and zucchini to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Pour in the crushed tomatoes, followed by the Italian seasoning and a pinch of red pepper flakes (if using). Stir everything together and let it simmer for 5 minutes.
  5. Return the cooked ground turkey to the skillet and mix well with the sauce and vegetables. Taste and adjust the seasoning with more salt and pepper as needed.
  6. Remove from heat and sprinkle with freshly grated Parmesan cheese. Top with optional fresh basil for garnish.
  7. Serve hot and enjoy!
