  • 2 tablespoons honey (preferably raw or local)
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons fresh thyme leaves, finely chopped
  • 1 tablespoon freshly squeezed lemon juice
  • 1 clove garlic, minced (optional)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the rainbow carrots into uniform sticks or chunks about 3-4 inches long and ½ inch thick.
  3. In a mixing bowl, whisk together melted butter, honey, lemon juice, minced garlic (if using), salt, pepper, and chopped thyme.
  4. Toss the carrots in the glaze until completely coated.
  5. Spread the glazed carrots evenly on a rimmed baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, flipping the carrots halfway through to ensure even caramelization.
  7. Remove from the oven and let cool for 5 minutes to allow the glaze to thicken.
  8. Give the carrots a quick toss and transfer to a serving dish. Optionally, sprinkle extra fresh thyme or flaky sea salt before serving.

Notes

Use fresh thyme for best flavor; dried thyme can be substituted but use half the amount. Flip carrots halfway through roasting for even caramelization. For a dairy-free version, substitute butter with olive oil or plant-based butter and honey with maple syrup. Adding smoked paprika or chili flakes can add a warm, spicy twist. Use parchment paper on baking sheet for easier cleanup.
