  • 23 tablespoons Pickling Spice (mustard seeds, coriander, bay leaves, peppercorns, cloves)
  • 34 cloves Garlic, smashed
  • 1 large Onion, quartered
  • 34 Carrots, peeled and chopped (optional)
  • 45 medium Potatoes, peeled and halved
  • 1/2 head Cabbage, cut into wedges

Instructions

  1. Rinse corned beef brisket under cold water to wash off excess salt. Place in a large pot or Dutch oven.
  2. Add pickling spice, smashed garlic cloves, and quartered onion around the meat.
  3. Pour enough cold water to cover the brisket by about an inch (roughly 8 cups / 1.9 liters).
  4. Slowly bring the pot to a gentle simmer over medium heat. Avoid boiling hard.
  5. Reduce heat to low, cover the pot, and let the brisket simmer gently for 3 to 3.5 hours, checking occasionally to maintain a gentle bubble.
  6. About 30 minutes before the meat finishes, add peeled and chopped carrots and potatoes to the pot.
  7. Add cabbage wedges for the final 15 minutes of cooking.
  8. Test the meat for tenderness by poking with a fork; it should yield easily.
  9. Remove the brisket to a cutting board and let it rest for 10 minutes before slicing against the grain.
  10. Serve sliced corned beef with cooked vegetables and ladle some broth over the top.
