Instructions

  1. Preheat oven to 425°F (220°C). Toss diced Yukon Gold potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden and crispy.
  2. While potatoes roast, combine flour, baking soda, baking powder, salt, and sugar in a bowl. Stir in buttermilk until just combined. Form dough into a round loaf on a parchment-lined baking sheet. Score a cross on top and brush with melted butter. Bake for 30-35 minutes until golden and a skewer inserted comes out clean. Let cool slightly before slicing.
  3. Crack eggs into a bowl and whisk with cottage cheese until smooth. Melt butter in a non-stick skillet over medium-low heat. Pour in egg mixture and cook gently, stirring slowly with a silicone spatula until creamy and soft. Remove from heat just before fully set. Season with salt, pepper, and fold in chopped chives.
  4. Arrange crispy potatoes, scrambled eggs, and warm soda bread on a serving platter. Garnish potatoes with fresh parsley. Add optional sides like cooked bacon or hot sauce if desired.
