  • 2 tablespoons Greek yogurt
  • 1 tablespoon honey, plus extra for drizzling
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon freshly grated lemon zest
  • A few fresh mint leaves, finely chopped (optional)
  • Butter for toasting the bread (unsalted, room temperature)

Instructions

  1. Rinse and slice 1 cup of fresh strawberries. Set aside.
  2. In a mixing bowl, combine 4 oz softened cream cheese, 2 tablespoons Greek yogurt, 1 tablespoon honey, 1/2 teaspoon vanilla extract, and 1 teaspoon freshly grated lemon zest. Mix until smooth and creamy, about 2-3 minutes. Add a splash of milk or yogurt if too thick.
  3. Heat a non-stick skillet over medium heat. Spread a thin layer of butter on each bread slice. Place them butter-side-down in the skillet and toast until golden brown and crispy, about 2-3 minutes per side.
  4. Spread a generous layer of the creamy mixture evenly over each slice of warm toast. Top with sliced strawberries and drizzle a little extra honey on top.
  5. Sprinkle finely chopped fresh mint leaves on top if using. Serve immediately.

Notes

Let cream cheese soften at room temperature for at least 30 minutes before mixing for easier blending. Watch toast closely to avoid burning. Use thicker bread slices to prevent sogginess.
