  • 1/2 cup cream cheese frosting (about 120 g)
  • 2 cups semi-sweet chocolate chips (340 g)
  • 1 tablespoon coconut oil (15 ml)
  • Sprinkles, mini chocolate chips, or crushed nuts for topping (optional)
  • Colored candy melts for decoration (optional)
  • Lollipop sticks or sturdy wooden skewers

Instructions

  1. Bake the cake according to package instructions (usually 35-40 minutes at 350°F / 175°C) in a greased 9×13 inch pan. Cool completely on a wire rack.
  2. Crumble the cooled cake into fine crumbs using hands or a fork, about 5 minutes.
  3. Mix the cake crumbs with 1/2 cup cream cheese frosting until the mixture sticks together like dough but is not too wet. Add more frosting if needed.
  4. Roll the mixture into 1 to 1.5-inch balls. Place on a parchment-lined baking sheet. Insert lollipop sticks halfway into each ball and chill in the fridge for at least 30 minutes.
  5. Melt chocolate chips and coconut oil together in 30-second intervals in the microwave or over a double boiler, stirring until smooth.
  6. Dip each cake pop into the melted chocolate, letting excess drip off. Add sprinkles or toppings immediately if desired.
  7. Let cake pops set at room temperature or in the fridge until chocolate hardens, about 15-20 minutes.

Notes

Chill cake balls before dipping to prevent crumbling. Use coconut oil in chocolate for a smooth, shiny coating. Cream cheese frosting mimics Starbucks flavor better than buttercream. Store cake pops in an airtight container in the fridge for up to 5 days or freeze for up to a month.
