  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Fritos corn chips (for serving)
  • Optional toppings: sliced jalapeños, chopped green onions, sour cream

Instructions

  1. Shred the cheddar cheese, cube the processed cheese, and soften the cream cheese by leaving it out at room temperature for about 15 minutes or microwave for 15 seconds if in a hurry.
  2. In a medium saucepan over medium heat, warm the canned chili, stirring occasionally for 3-4 minutes until heated through.
  3. Stir in the softened cream cheese and milk until the cream cheese melts and combines smoothly with the chili, about 2-3 minutes.
  4. Gradually add the shredded cheddar and processed cheese cubes to the pot, stirring constantly to melt fully, about 5-6 minutes.
  5. Sprinkle in the onion powder, garlic powder, and smoked paprika. Stir to combine and taste; adjust seasoning if needed.
  6. Check the consistency; if too thick, add a splash more milk; if too thin, simmer gently for 1-2 minutes.
  7. Pour the dip into a warm serving bowl and add optional toppings like sliced jalapeños or green onions.
  8. Serve immediately with Fritos corn chips or your favorite crunchy dippers.

Notes
