Dreamy Honey Lavender Cheesecake

A creamy, velvety cheesecake with subtle floral notes of lavender and delicate sweetness of honey, perfect for any gathering or special occasion.

  • 1 Β½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup honey
  • 3 large eggs, room temperature
  • Β½ cup sour cream
  • 2 tsp pure vanilla extract
  • 1 tsp dried culinary lavender (ground or finely chopped)
  • Β½ cup heavy cream
  • 1 tbsp honey
  • Fresh lavender sprigs (optional, for garnish)
  • Pinch of salt (optional, to balance the sweetness)

Instructions

  1. Preheat your oven to 325Β°F (163Β°C). Wrap the outside of your springform pan with aluminum foil to prevent water from seeping in during baking.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press it evenly into the bottom of the springform pan, making sure it’s packed tightly. Bake for 10 minutes, then set aside to cool.
  3. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the honey and mix until fully incorporated. Add the eggs one at a time, beating well after each addition. Mix in the sour cream, vanilla extract, and ground lavender.
  4. Pour the filling over the cooled crust and use a spatula to smooth the top. Tap the pan gently on the counter to remove any air bubbles.
  5. Place the springform pan inside a larger baking dish. Fill the larger dish with hot water until it comes halfway up the sides of the springform pan.
  6. Carefully transfer the pan to the oven and bake for 55-60 minutes, or until the edges are set and the center has a slight wobble. Turn off the oven and let the cheesecake cool inside for 1 hour.
  7. Remove the cheesecake from the water bath and place it on a wire rack to cool completely. Once cooled, refrigerate for at least 4 hours or overnight.
  8. Whip the heavy cream and honey together until soft peaks form. Spread over the chilled cheesecake and garnish with fresh lavender sprigs, if desired.
  9. Carefully remove the sides of the springform pan, slice, and serve chilled.
