  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 cup panko breadcrumbs
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large eggs, beaten
  • Vegetable oil or peanut oil, for frying (about 2 inches deep)
  • Optional dipping sauces: ranch dressing, spicy mayo, honey mustard

Instructions

  1. Cut boneless, skinless chicken breasts or thighs into 1 to 1.5 inch bite-sized chunks and pat dry with paper towels.
  2. Place chicken pieces in a bowl and pour 1 cup of buttermilk over them. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. In a shallow dish, combine 1 cup all-purpose flour, ½ cup cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well.
  4. Beat 2 large eggs in a separate bowl. Place 1 cup panko breadcrumbs in another dish. Arrange these three bowls side by side for dredging.
  5. Remove chicken from buttermilk, letting excess drip off. First coat pieces in the seasoned flour mixture, pressing lightly to adhere. Then dip into beaten eggs, and finally roll in panko breadcrumbs until well coated.
  6. Pour vegetable oil into a deep frying pan about 2 inches deep and heat to 350°F (175°C). Use a thermometer to maintain temperature.
  7. Fry chicken bites in batches for 4-5 minutes, turning occasionally, until golden brown and cooked through (internal temperature 165°F / 74°C). Avoid overcrowding the pan.
  8. Remove bites with a slotted spoon and place on a wire rack set over paper towels to drain excess oil. Let rest for 5 minutes to crisp up.
  9. Serve warm with your favorite dipping sauces.

Notes

Maintain oil temperature at 350°F (175°C) for best crispiness and to avoid greasy bites. Use chicken thighs for juicier bites. Fry in small batches to keep oil temperature steady. For gluten-free, substitute flour and panko with gluten-free alternatives. For dairy-free, use almond or soy milk with vinegar instead of buttermilk. Leftovers can be reheated in the oven at 375°F for 10 minutes to restore crispiness.
