  • 12 ounces thinly sliced corned beef
  • 8 slices Swiss cheese
  • 1 cup well-drained sauerkraut
  • 1/2 cup Russian dressing (store-bought or homemade)
  • 4 tablespoons unsalted butter, softened
  • Fresh ground black pepper to taste

Instructions

  1. Drain the sauerkraut well by pressing it in a sieve or paper towel-lined bowl and set aside.
  2. Lay out 4 slices of rye bread and spread about 2 tablespoons of Russian dressing evenly on each slice.
  3. Layer 3 ounces of thinly sliced corned beef, 2 tablespoons of drained sauerkraut, and 2 slices of Swiss cheese on each slice of bread.
  4. Place the remaining 4 slices of bread on top to form sandwiches.
  5. Spread softened butter on the outside of each sandwich slice, both top and bottom.
  6. Heat a non-stick skillet or cast iron pan over medium-low heat for 3-4 minutes until evenly heated.
  7. Place two sandwiches in the pan and cook for 4-5 minutes on one side until golden brown and crispy.
  8. Flip sandwiches carefully using a wide spatula and cook the other side for another 4-5 minutes until golden brown and cheese is melted. Press lightly with the spatula.
  9. Remove sandwiches from the pan and let rest for 1-2 minutes before slicing diagonally.

Notes

Drain sauerkraut thoroughly to avoid sogginess. Use softened butter for an even golden crust. Cook on medium-low heat to melt cheese without burning bread. Cover pan loosely after flipping if cheese melts slowly. Press sandwiches gently while grilling. For gluten-free or dairy-free options, substitute bread and cheese accordingly.
