  • 8 large eggs, room temperature
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 4 green onions, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1 cup diced bell peppers (optional)
  • 1/2 cup sliced mushrooms (optional)
  • 1 cup roughly chopped spinach (optional)
  • Hot sauce, a few dashes (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Fry bacon until crispy, then cool and crumble.
  3. Dice green onions, bell peppers, and any other veggies. Sauté mushrooms or spinach if using to reduce moisture.
  4. In a large mixing bowl, whisk together eggs and milk until smooth and frothy. Add salt, black pepper, and garlic powder.
  5. Stir in shredded cheddar cheese.
  6. Scatter half the cooked bacon and any veggies over the bottom of the baking dish. Pour egg mixture evenly over top and gently mix.
  7. Arrange frozen tater tots in neat rows across the top, covering the entire surface.
  8. Sprinkle remaining bacon and a little extra cheese over the top.
  9. Bake for 50–60 minutes, checking at 45 minutes. If browning too quickly, loosely cover with foil. Casserole is done when eggs are set, cheese is bubbly, and tater tots are golden and crispy.
  10. Let casserole rest for 5–10 minutes before slicing and serving.

Notes

For best results, use frozen tater tots and freshly shredded cheese. Sauté veggies to reduce moisture. Assemble the night before for easy morning baking. For extra crunch, broil for 2–3 minutes at the end. Vegetarian and gluten-free adaptations are easy—skip bacon and use certified gluten-free tater tots.
