  • 2 tablespoons olive oil (extra virgin preferred, can substitute avocado or grapeseed oil)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Wash and peel the sweet potatoes. Slice them into even sticks about 1/4 to 1/3 inch thick.
  3. Pat the fries dry with a clean kitchen towel or paper towels to remove excess moisture.
  4. Transfer the fries into a large mixing bowl. Sprinkle the cornstarch over them and toss until each fry is lightly coated.
  5. Drizzle the olive oil over the fries, then add smoked paprika, garlic powder, cayenne pepper (if using), sea salt, and black pepper. Toss well to coat evenly.
  6. Arrange the fries in a single layer on the prepared baking sheet, making sure they aren’t overcrowded.
  7. Bake for 15 minutes, then use a spatula or tongs to flip each fry carefully.
  8. Return to the oven and bake for another 15-20 minutes, watching closely to avoid burning. Fries should be golden brown and crispy outside, tender inside.
  9. Remove from the oven and let cool for a few minutes to firm up the crunch.
  10. Serve immediately with your favorite dipping sauce or a squeeze of fresh lime.
