  • 1 pound ground chicken or turkey (lean works best)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1/4 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/4 tsp cayenne pepper (optional)
  • For the dipping sauce:
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp hot sauce
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, combine ground chicken or turkey, shredded cheddar cheese, chopped green onions, minced garlic, smoked paprika, black pepper, salt, and cayenne pepper if using. Mix gently but thoroughly.
  3. Add the beaten egg to the mixture and mix until just combined.
  4. Add panko breadcrumbs and fold in. The mixture should be sticky but firm enough to hold shape. Add more breadcrumbs if too wet.
  5. Shape the mixture into bite-sized balls about 1 to 1.5 inches in diameter and place evenly spaced on the baking sheet.
  6. Bake for 18-22 minutes until golden brown and cooked through (internal temperature should reach 165Β°F).
  7. While baking, whisk together sour cream or Greek yogurt, mayonnaise, hot sauce, lemon juice, salt, and pepper in a small bowl to make the dipping sauce.
  8. Let the bites cool slightly on a cooling rack before serving with the dipping sauce.

Notes

Do not overcrowd the baking sheet to ensure even crisping. For extra crunch, broil for 1-2 minutes at the end but watch closely to avoid burning. Use panko breadcrumbs for a lighter, crunchier crust. Let bites rest on a cooling rack to keep crispiness. Can be made ahead and refrigerated before baking. Freeze leftovers on a tray then transfer to freezer bag for up to 2 months.
