A quick and elegant appetizer featuring fresh asparagus wrapped in crispy prosciutto, roasted to perfection with optional Parmesan and lemon juice for a bright finish.

  • 1 pound fresh asparagus spears, trimmed
  • 8 slices thinly sliced prosciutto
  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice (optional)
  • Freshly ground black pepper, to taste
  • ½ teaspoon garlic powder (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Rinse 1 pound of fresh asparagus and trim the woody ends about 1 to 2 inches from the bottom.
  2. In a bowl, toss the asparagus with 1 tablespoon olive oil, ½ teaspoon garlic powder, and freshly ground black pepper to taste.
  3. Group the asparagus into bundles of 3-4 spears each.
  4. Wrap one slice of prosciutto snugly around each asparagus bundle, starting at the bottom and spiraling upwards, leaving the tips slightly exposed.
  5. Line a baking sheet with parchment paper or a silicone mat and place the wrapped bundles seam-side down.
  6. Preheat oven to 400°F (200°C) and roast the bundles for 12-15 minutes until the prosciutto is crisp and asparagus is tender but still firm.
  7. Remove from oven and immediately sprinkle with 2 tablespoons grated Parmesan cheese and a light squeeze of fresh lemon juice.
  8. Serve warm or at room temperature.

Notes

Do not overcrowd the baking sheet to keep prosciutto crispy. Use thin prosciutto slices for best results. If prosciutto isn’t crisping enough, broil for 1-2 minutes watching carefully. Reheat leftovers in oven at 350°F for 5-7 minutes to restore crispiness; avoid microwaving.
