Ingredients

Scale
  • 2 ½ cups (310 g) all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup (240 ml) warm water (about 110°F / 43°C)
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • ½ cup (125 ml) tomato sauce
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 1 cup (100 g) shredded mozzarella cheese
  • About 15 pepperoni slices (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Activate the yeast: In a small bowl, stir 1 cup warm water with 1 tsp sugar and the packet of active dry yeast. Let sit for 5-10 minutes until foamy.
  2. Make the dough: In a large bowl, combine flour and salt. Add yeast mixture and olive oil, stir until shaggy dough forms. Knead on floured surface for 8-10 minutes until smooth and elastic.
  3. First rise: Place dough in lightly oiled bowl, cover with towel, and let rise in warm spot for about 1 hour until doubled in size.
  4. Prep the sauce: Mix tomato sauce with garlic powder, oregano, salt, and pepper in a small bowl. Adjust seasoning to taste.
  5. Shape the pizzas: Punch down dough and divide into 4 equal portions. Roll each into a ball, then flatten and shape into a 6-inch heart using hands, rolling pin, or cookie cutter.
  6. Preheat oven to 475°F (245°C). Place pizza stone inside if using.
  7. Assemble pizzas: Place heart-shaped dough on parchment or floured peel. Spread 2 tbsp sauce evenly, sprinkle ¼ cup shredded mozzarella, and add pepperoni if desired.
  8. Bake: Transfer pizzas to oven on preheated stone or baking sheet. Bake 10-12 minutes until crust is golden and cheese bubbly.
  9. Garnish and serve: Cool on rack for a few minutes, top with fresh basil, slice, and serve warm.

Notes

Preheat oven and baking surface for at least 30 minutes for best crispiness. Roll dough thinner for crispier crust. Avoid overloading toppings to prevent soggy crust. Dough can be made up to 24 hours ahead and refrigerated. Reheat leftovers in oven at 375°F for 5-7 minutes to restore crispness. Use gluten-free flour and dairy-free cheese for dietary adaptations.
