  • 1 cup (240 ml) warm water
  • 1 tsp granulated sugar

  • 2 tbsp olive oil
  • 45 garlic cloves, roasted and minced
  • 1/4 cup (25 g) grated Parmesan cheese
  • Fresh rosemary, chopped (optional)

Instructions

  1. Activate the yeast: In a large bowl, combine 1 cup (240 ml) warm water, 2 1/4 tsp (1 packet) active dry yeast, and 1 tsp sugar. Let it sit for 5-10 minutes until foamy.
  2. Mix the dough: Add 2 cups (240 g) all-purpose flour, 1 tsp salt, and 2 tbsp olive oil to the yeast mixture. Stir with a wooden spoon until a sticky dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. First proof: Place the dough in a greased bowl and cover with plastic wrap or a damp kitchen towel. Let it rise in a warm place for 1-2 hours, or until it has doubled in size.
  5. Prepare the garlic and toppings: Roast 4-5 garlic cloves in the oven at 375°F (190°C) for 15-20 minutes. Once cooled, mince or mash the garlic. Grate 1/4 cup (25 g) Parmesan cheese and chop fresh rosemary (if using).
  6. Shape the dough: After proofing, punch down the dough and transfer it to a parchment-lined baking sheet. Stretch and press the dough into a rectangle or circle, about 1 inch thick.
  7. Second proof: Cover the dough again and let it rest for 30 minutes.
  8. Preheat the oven: While the dough is resting, preheat your oven to 400°F (200°C).
  9. Prepare the topping: Brush the dough generously with olive oil. Sprinkle the roasted garlic, Parmesan cheese, and rosemary evenly across the surface.
  10. Create dimples: Use your fingertips to gently press dimples into the dough, giving it that classic focaccia look.
  11. Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the bread is golden brown and crispy around the edges.
  12. Cool and serve: Remove the focaccia from the oven and let it cool slightly before slicing. Serve warm and enjoy!
