A quick and easy recipe for elegant, crispy crackers topped with a blend of sharp aged cheddar and Parmesan cheese, perfect for snacking or entertaining.

  • ½ teaspoon garlic powder
  • ½ teaspoon dried rosemary or thyme
  • 6 tablespoons unsalted butter, cold and cubed
  • 45 tablespoons cold water
  • 1 cup sharp aged cheddar cheese, shredded
  • ¼ cup Parmesan cheese, finely grated
  • 1 teaspoon smoked paprika (optional)
  • Freshly ground black pepper, to taste
  • Honey or fig jam (optional, for serving)
  • Fresh herbs for garnish (like parsley or chives)

Instructions

  1. In a large bowl, combine 1 ½ cups all-purpose flour, ½ teaspoon salt, ½ teaspoon garlic powder, and ½ teaspoon dried rosemary. Whisk together until evenly distributed.
  2. Add 6 tablespoons cold, cubed unsalted butter to the dry mix. Work the butter into the flour using a pastry cutter or fingers until the mixture resembles coarse crumbs with some pea-sized pieces. Chill in the fridge for 10 minutes if butter gets too warm.
  3. Slowly add 4 tablespoons cold water, mixing gently. Add an additional tablespoon if dough feels dry. Form dough into a disk, wrap in plastic, and chill for 30 minutes.
  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or silicone mat.
  5. Roll out chilled dough on a lightly floured surface into a thin rectangle about 1/8 inch (3 mm) thick.
  6. Cut dough into 2-inch (5 cm) squares or rectangles. Transfer to baking sheet, spacing about ½ inch (1.25 cm) apart.
  7. In a small bowl, mix 1 cup shredded sharp cheddar, ¼ cup grated Parmesan, 1 teaspoon smoked paprika (if using), and freshly ground black pepper. Sprinkle over each cracker, pressing lightly.
  8. Bake for 12-15 minutes until crackers are golden and cheese bubbles and browns slightly. Tent with foil if cheese browns too fast.
  9. Cool crackers completely on baking sheet for about 15 minutes before serving. Serve with honey or fig jam and garnish with fresh herbs if desired.

Notes

Keep butter cold for flaky texture. Chill dough before rolling to prevent shrinking. Roll dough evenly for consistent baking. Tent crackers with foil if cheese browns too quickly. Cool crackers fully on baking sheet for best crispiness. Can substitute almond flour for gluten-free and coconut oil for dairy-free.
