  • 1 1/2 cups fresh broccoli florets, finely chopped (or frozen, thawed and patted dry)
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 large eggs, room temperature
  • 1/2 cup bread crumbs (plain or panko; gluten-free if needed)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray or melted butter (optional, for brushing)
  • 1/4 cup extra bread crumbs (for rolling)
  • Optional: 2 tablespoons chopped green onions
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 1/4 cup diced ham or cooked bacon

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Finely chop broccoli florets. If using frozen, thaw and pat dry.
  3. In a large mixing bowl, combine cooked rice, chopped broccoli, shredded cheddar, grated Parmesan, bread crumbs, eggs, garlic powder, onion powder, salt, and black pepper. Mix thoroughly.
  4. Stir in any optional mix-ins such as green onions, red pepper flakes, or diced ham/bacon.
  5. Use a small cookie scoop or tablespoon to portion out the mixture. Roll each portion into a ball about 1.5 inches wide.
  6. Roll each ball in extra bread crumbs to coat. Place on the prepared baking sheet.
  7. Lightly spray with olive oil or brush with melted butter for extra crispiness (optional).
  8. Bake for 18-22 minutes, flipping halfway, until bites are golden and crisp and cheese is bubbling.
  9. Let cool for 5-10 minutes before serving. Serve warm with your favorite dipping sauce.

Notes

Day-old rice works best for crispiness. For gluten-free, use gluten-free bread crumbs or ground oats. You can prep the mixture ahead and refrigerate. Air fryer option: cook at 375°F for 10-12 minutes, shaking halfway. Add mix-ins like green onions, bacon, or ham for extra flavor. Serve with ranch, spicy ketchup, or yogurt-lemon dip.
