A quick and easy snack featuring mini smokies stuffed with sharp cheddar cheese and wrapped in crispy bacon, perfect for picky eaters and parties.

  • 24 mini smokies (cocktail sausages), about 1 pound
  • 12 slices bacon, cut in half lengthwise (thick-cut recommended)
  • 6 ounces sharp cheddar cheese, cut into 1-inch sticks
  • Toothpicks for securing bacon
  • Optional: 1 tablespoon brown sugar, for sprinkling
  • Optional: ½ teaspoon garlic powder or smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a medium bowl, toss mini smokies with optional garlic powder or smoked paprika if using.
  3. Slice sharp cheddar into sticks about 1 inch long and ¼ inch thick.
  4. Carefully slice each mini smokie lengthwise to create a pocket without cutting all the way through.
  5. Insert one cheese stick into each smokie pocket.
  6. Wrap half a slice of bacon tightly around each cheese-stuffed smokie and secure with a toothpick.
  7. Place wrapped smokies seam side down on the prepared baking sheet.
  8. Optionally sprinkle brown sugar on top of each smokie.
  9. Bake for 20-25 minutes, turning once halfway through, until bacon is golden and crisp and cheese is melted.
  10. Let rest for 5 minutes before serving.

Notes

If bacon crisps too fast, loosely cover with foil halfway through baking to keep smokies juicy. Air fryer method: 400°F (200°C) for 10-12 minutes crisps bacon quickly. Let rest 5 minutes before serving to avoid hot cheese burns. Avoid microwaving leftovers to keep bacon crispy.
