These crispy bacon wrapped hot dogs with melted cheese are a quick, easy, and crowd-pleasing comfort food. Perfect for parties, game days, or cozy family dinners, each bite delivers salty, savory perfection with gooey cheese and shatteringly crisp bacon.

  • 8 regular-sized hot dogs (beef, turkey, or vegetarian)
  • 8 slices thin or regular-sliced bacon (not thick-cut)
  • 4 slices cheddar, Monterey Jack, mozzarella, or pepper jack cheese (cut into strips)
  • 1 cup shredded cheese (cheddar, Monterey Jack, mozzarella, or pepper jack)
  • Nonstick cooking spray or oil (for greasing baking sheet)
  • 16 toothpicks (for securing bacon)
  • Optional: chopped jalapeños, chopped green onions or chives, barbecue sauce, ketchup, mustard, everything bagel seasoning, smoked paprika

Instructions

  1. Preheat oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper or foil, and set a wire rack on top if using.
  2. Cut cheese slices into strips about ¼-inch wide. Shred about 1 cup extra cheese for topping.
  3. Using a sharp knife, make a lengthwise slit in each hot dog to create a pocket for the cheese.
  4. Tuck 2-3 cheese strips into each hot dog’s pocket and press gently.
  5. Wrap each hot dog tightly with one slice of bacon, spiraling from end to end. Secure both ends with toothpicks.
  6. Sprinkle shredded cheese over the top of each bacon-wrapped hot dog. Add jalapeños or smoked paprika if desired.
  7. Arrange hot dogs on the wire rack, leaving space between each. If not using a rack, place directly on lined sheet.
  8. Bake for 20-25 minutes, turning once halfway through, until bacon is golden and crisp and cheese is bubbly. If cheese oozes too fast, cover loosely with foil for last 5 minutes.
  9. Remove toothpicks, let hot dogs cool on rack for 2 minutes, then serve immediately with desired toppings and dips.

Notes

For extra crispy bacon, use a wire rack and pat hot dogs dry before wrapping. Don’t overstuff cheese inside hot dogs to prevent leaking. Secure bacon tightly with toothpicks and remember to remove them before serving. Customize with different cheeses, toppings, or use turkey/veggie dogs for dietary needs. Assemble ahead and bake just before serving for parties.
