  • 1 cup panko breadcrumbs
  • 1/2 cup freshly shredded Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon ground black pepper
  • 2 eggs
  • Cooking spray (olive oil spray)

Instructions

  1. Preheat your air fryer to 375Β°F (190Β°C).
  2. Pound the chicken breasts to an even thickness using a meat mallet.
  3. In a shallow bowl, whisk the eggs until smooth. In another bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip each chicken breast into the egg mixture, ensuring it’s fully coated. Then, press the chicken into the breadcrumb mixture, making sure every inch is covered.
  5. Spray the air fryer basket with cooking spray to prevent sticking. Place the coated chicken breasts in the basket in a single layer.
  6. Lightly spray the tops of the chicken with cooking spray for an extra crispy finish.
  7. Cook the chicken for 10 minutes. Flip them over and cook for an additional 8-10 minutes, or until the internal temperature reaches 165Β°F (74Β°C) and the crust is golden brown.
  8. Remove the chicken from the air fryer and let it rest for 2-3 minutes before serving.

Notes

For extra crispiness, double-coat the chicken by repeating the egg and breadcrumb steps. Use fresh Parmesan for better melting and flavor. Avoid overcrowding the air fryer basket to ensure even crisping.
