  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups (1 liter) chicken or vegetable broth
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 cup (about 150 g) sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 16 ounces (450 g) cheese ravioli
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot or Dutch oven over medium heat.
  2. Add 1 pound of Italian sausage (casings removed) and cook until browned, breaking it up into small pieces as it cooks, about 5-7 minutes. Drain excess grease if needed.
  3. Add 1 medium onion, diced, and sautΓ© for 3-4 minutes until softened and translucent.
  4. Stir in 4 cloves of garlic, minced, and cook for 1-2 minutes, or until fragrant.
  5. Pour in 4 cups (1 liter) of chicken or vegetable broth and scrape the bottom of the pot to release any browned bits. Bring to a gentle simmer.
  6. Lower the heat and stir in 1 cup (240 ml) of heavy cream, followed by 1/2 cup (50 g) of grated Parmesan cheese. Stir until the cheese is melted and the broth is smooth.
  7. Add 1 cup (about 150 g) of sun-dried tomatoes (chopped) and 1 teaspoon of Italian seasoning. Let the soup simmer for another 5-7 minutes to infuse the flavors.
  8. Gently add 16 ounces (450 g) of cheese ravioli to the pot. Cook according to the package instructions, typically around 3-5 minutes, until the ravioli is tender.
  9. Stir in 2 cups of fresh spinach and cook for another minute or two, just until wilted.
  10. Season the soup with salt and pepper to taste. Serve immediately with extra grated Parmesan and crusty bread for dipping.
