  • 10 ounces mini marshmallows (about 4 cups or one standard bag)
  • 4 tablespoons (57 grams) unsalted butter, softened
  • 1 cup (about 170 grams) white chocolate chips or chopped white chocolate
  • 6 cups (about 180 grams) crispy rice cereal
  • A few drops of green gel food coloring
  • 1 teaspoon vanilla extract

Instructions

  1. Line a 9×13 inch baking dish with parchment paper or lightly grease it and set aside.
  2. In a large saucepan over low heat, melt 4 tablespoons (57 g) of unsalted butter until bubbly.
  3. Add 10 ounces (about 4 cups) of mini marshmallows and stir constantly until fully melted, about 3-5 minutes.
  4. Add 1 cup (170 g) of white chocolate chips to the melted marshmallow mixture and stir continuously until the chocolate is completely melted and the mixture is creamy, about 2-3 minutes.
  5. Stir in 1 teaspoon of vanilla extract and a few drops of green gel food coloring until the color is evenly distributed and the mixture looks smooth and minty.
  6. Remove the pan from heat and immediately add 6 cups (180 g) of crispy rice cereal. Fold the cereal gently but thoroughly until every piece is coated, about 1-2 minutes.
  7. Transfer the mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture evenly and firmly into the pan without pressing too hard.
  8. Let the treats cool completely at room temperature for about 1 hour. Once set, cut into squares or shamrock shapes.

Notes

Melt butter and marshmallows on low heat to avoid burning. Add white chocolate while marshmallows are warm to prevent seizing. Use gel food coloring for vibrant color without altering texture. Press treats gently to keep them light and crispy. Work quickly as mixture sets fast. For softer treats, warm pan briefly if mixture hardens before pressing.
