  • 1 can (10 ounces) Rotel tomatoes, undrained (mild or spicy, depending on taste)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese (plus extra for topping)
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional garnishes: Fresh parsley or sliced green onions

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Shred rotisserie chicken or leftover cooked chicken into bite-sized pieces. Set aside.
  3. In a large mixing bowl, combine softened cream cheese, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Whisk until smooth and creamy. Stir in 1 cup of shredded cheddar cheese until well incorporated.
  4. Add cooked spaghetti, shredded chicken, and Rotel tomatoes (including the juice) to the bowl. Mix everything together until evenly coated with the creamy sauce.
  5. Grease a 9×13 baking dish with melted butter. Transfer the spaghetti mixture into the dish, spreading it out evenly.
  6. Sprinkle the remaining shredded cheddar cheese evenly over the top of the casserole.
  7. Preheat oven to 375Β°F (190Β°C). Bake the casserole uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let the casserole cool for 5 minutes. Garnish with chopped parsley or green onions before serving.
