  • 1 large head of cauliflower, chopped into florets
  • 1 whole bulb of garlic (roasted for deep flavor)
  • 2 tablespoons olive oil (plus extra for roasting)
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • 2 tablespoons unsalted butter, softened (or use a dairy-free alternative)
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: Chopped parsley, chives, or a sprinkle of smoked paprika

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Slice the top off the garlic bulb to expose the cloves. Drizzle with a teaspoon of olive oil, wrap tightly in aluminum foil, and place on a baking sheet.
  3. Bake the garlic for 30-35 minutes, or until the cloves are golden and soft. Remove from the oven and let cool.
  4. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 8-10 minutes, or until fork-tender.
  5. Carefully drain the cooked cauliflower in a colander and let it sit for a minute to release excess moisture.
  6. Add the cauliflower to a food processor. Squeeze the roasted garlic cloves out of their skins and add them to the processor. Add 2 tablespoons of softened butter and 1/4 cup almond milk. Blend until smooth and creamy.
  7. Add salt and freshly ground black pepper to your preference. Blend again to incorporate the seasoning evenly.
  8. Transfer the creamy mashed cauliflower to a serving dish and garnish with chopped parsley, chives, or a sprinkle of smoked paprika if desired.

Notes

Roast garlic to perfection to avoid bitterness. Let the cauliflower sit after boiling to release excess moisture. Blend while warm for a smoother texture. Adjust consistency with milk or butter as needed.
