  • 1 1/2 cups graham cracker crumbs (about 10 full crackers, finely crushed)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 cups heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

  1. Crush the graham crackers into fine crumbs using a food processor or a zip-top bag and rolling pin. In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press the mixture evenly into the bottom of your 9×13-inch baking dish to form the crust. Refrigerate while you prepare the next layer.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, pumpkin puree, vanilla extract, cinnamon, and nutmeg. Beat again until fully combined and creamy. Spread this mixture evenly over the chilled crust.
  3. In another mixing bowl, pour in the heavy whipping cream and add the powdered sugar. Using a hand mixer or stand mixer, whip the cream until stiff peaks form. Don’t overbeat, or you’ll end up with butter! Spread the whipped cream over the pumpkin layer carefully.
  4. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to let the flavors meld and the layers set. Slice into squares and serve chilled!
