Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9×9-inch pan with parchment paper, leaving some overhang for easy removal.
  2. Crush 24 Oreos into fine crumbs using a food processor or rolling pin. Mix crumbs with melted butter and 2 tablespoons sugar until evenly combined.
  3. Press the crust mixture firmly into the bottom of the prepared pan to form an even layer. Bake for 10 minutes to set the crust, then remove and let cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth and creamy (about 2-3 minutes). Add 2/3 cup sugar and continue beating until well combined.
  5. Add eggs one at a time, mixing on low speed just until combined to avoid overmixing.
  6. Stir in peppermint extract and sour cream.
  7. Fold in the coarsely chopped Oreos gently with a spatula to distribute evenly.
  8. Pour the filling over the crust, spreading evenly. Optionally, sprinkle reserved crushed Oreos on top.
  9. Bake for 35-40 minutes until the center is just set but still slightly jiggly.
  10. Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
  11. Cut into bars using a sharp knife dipped in hot water for clean edges. Serve chilled.
