Instructions

  1. Place your saucepan over medium heat and add the butter. Let it melt completely, but be cautious not to let it brown.
  2. Add the minced garlic to the melted butter and cook for about 1-2 minutes, stirring frequently. You want the garlic to become fragrant but not turn brown.
  3. Slowly pour in the heavy cream while whisking continuously to create a smooth, even mixture without lumps.
  4. Add the lemon juice and zest to the saucepan. Keep whisking to combine the flavors evenly. Simmer for about 3-4 minutes.
  5. Gradually add the grated Parmesan cheese while stirring. This will thicken the sauce and add cheesy richness.
  6. Sprinkle in salt and pepper, adjusting to your preference. For a little heat, add a pinch of red pepper flakes.
  7. Once the sauce reaches your desired thickness, take it off the heat. It should coat the back of your spoon easily.
  8. Toss the sauce with freshly cooked pasta or drizzle over your favorite protein or veggies. Garnish with chopped parsley for freshness.

Notes

Use fresh lemon juice and zest for the best flavor. Avoid pre-grated Parmesan or bottled lemon juice. If the sauce becomes too thick, thin it out with a splash of reserved pasta water.
