Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, following package instructions. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it up into small pieces with a wooden spoon. Cook for 5-7 minutes, or until fully browned.
  3. Add the minced garlic to the skillet and sautΓ© for 1 minute, until fragrant. Be careful not to let the garlic burn.
  4. Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Reduce the heat to low and stir in the heavy cream. Let the sauce simmer gently for 3-4 minutes until slightly thickened.
  6. Gradually add the grated Parmesan cheese, stirring constantly until it melts into the sauce. Add the Italian seasoning and season with salt and pepper to taste.
  7. Combine the cooked fettuccine with the sauce, tossing to coat the pasta evenly. If the sauce feels too thick, add a splash of the reserved pasta water to loosen it up.
