  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons flour

  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (for garnish)
  • 12 oz egg noodles

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned and fully cooked, about 5-7 minutes. Break it up with a wooden spoon as it cooks. Remove the beef from the skillet and set aside.
  3. In the same skillet, add 1 tablespoon of butter and the chopped onion. SautΓ© for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for 5 minutes, stirring occasionally, until they release their moisture and begin to caramelize.
  5. Sprinkle 2 tablespoons of flour over the mushroom mixture and stir to coat evenly. Cook for 1 minute to eliminate the raw flour taste.
  6. Gradually pour in 2 cups of beef broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for 3-4 minutes until the sauce thickens.
  7. Reduce the heat to low and stir in 1 cup of sour cream until the sauce is smooth and creamy. Season with salt, pepper, and a pinch of paprika to taste.
  8. Return the cooked ground beef to the skillet, stirring to combine. Let everything simmer together for 2-3 minutes so the flavors meld.
  9. Serve the beef stroganoff over warm egg noodles, garnished with freshly chopped parsley. Enjoy!
