  • 12 ounces farfalle pasta, cooked according to package instructions
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 4 cups baby spinach, fresh and washed
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • Salt, to taste
  • Pepper, to taste
  • 1/8 teaspoon nutmeg (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta in a colander.
  2. Heat a large skillet over medium heat. Add the butter and olive oil, letting them melt together. Toss in the minced garlic and sauté for about 30 seconds, or until fragrant.
  3. Add the sliced cremini mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.
  4. Lower the heat slightly and add the fresh spinach to the skillet. Stir occasionally until the spinach is wilted, about 2-3 minutes.
  5. Pour the heavy cream into the skillet and stir to combine with the sautéed garlic, mushrooms, and spinach. Let the mixture simmer gently for 3-4 minutes, allowing the flavors to meld.
  6. Gradually stir in the grated Parmesan cheese, mixing until melted and the sauce becomes smooth and creamy. Season with salt, pepper, and a pinch of nutmeg or red pepper flakes if desired.
  7. Add the cooked farfalle to the skillet, tossing it well to coat every piece in the creamy sauce. If the sauce seems too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  8. Serve the creamy farfalle pasta hot, garnished with a sprinkle of fresh Parmesan cheese and cracked black pepper.
