Ingredients

  • 2 cups full-fat or low-fat cottage cheese (small curd preferred)
  • 1 ½ cups fresh raspberries (or thawed frozen raspberries)
  • 23 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ cup heavy whipping cream, chilled
  • 12 tablespoons powdered sugar (optional)
  • Fresh mint sprigs (optional, for garnish)

Instructions

  1. Wash the raspberries if using fresh ones, and pat them dry. Measure out the cottage cheese, honey, vanilla extract, and powdered sugar (if using).
  2. Place the cottage cheese, raspberries, honey, vanilla extract, and powdered sugar into a blender or food processor. Blend on high until the mixture is completely smooth, about 2 minutes. Add a splash of heavy cream if needed for blending.
  3. In a separate bowl, pour in the chilled heavy whipping cream. Using a hand mixer or stand mixer, whip the cream until soft peaks form, about 2-3 minutes. Avoid over-whipping.
  4. Gently fold the whipped cream into the raspberry-cottage cheese mixture using a spatula. Fold just until combined.
  5. Spoon the mousse into serving glasses or bowls. Layer with extra raspberries or keep it simple.
  6. Chill the mousse in the refrigerator for at least 1 hour to allow the flavors to meld and the texture to set.
  7. Before serving, garnish with fresh raspberries and a sprig of mint. Enjoy!
