  • 1 teaspoon peppermint extract
  • ½ cup mini chocolate chips (about 90 g)
  • 2 tablespoons whole milk (30 ml)
  • Optional: a few drops green food coloring
  • Optional: whipped cream for topping

Instructions

  1. Let the vanilla ice cream sit at room temperature for about 5 minutes until soft but not melted.
  2. In a mixing bowl, combine the softened ice cream and 2 tablespoons of whole milk. Stir gently to loosen the texture.
  3. Add 1 teaspoon peppermint extract. Stir well and taste; add more peppermint extract if desired.
  4. If using, add a few drops of green food coloring and mix gently until evenly colored.
  5. Fold in ½ cup mini chocolate chips carefully to avoid melting the ice cream.
  6. If the mixture is too soft, freeze for 15-20 minutes to firm up slightly.
  7. Scoop into serving cups or bowls. Top with whipped cream and extra chocolate chips or fresh mint if desired.

Notes

Do not overmix to avoid melting the ice cream. Use mini chocolate chips for the best texture. Adjust peppermint extract carefully as it can be strong. For a dairy-free version, substitute coconut or almond milk ice cream and plant-based milk.
