  • Ingredients called for on the cake mix box (usually 3 large eggs, 1/2 cup vegetable oil, 1 cup water)
  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 12 oz white chocolate or candy melts
  • Green food coloring gel
  • Christmas tree sprinkles or assorted holiday sprinkles
  • Edible gold stars or pearl dragées (optional)

Instructions

  1. Preheat oven to 350°F. Prepare vanilla cake mix according to package instructions (combine eggs, oil, and water with mix). Pour into a greased 9×13-inch pan and bake for 25-30 minutes, or until a toothpick comes out clean. Cool completely.
  2. In a large mixing bowl, beat softened cream cheese and butter until smooth and fluffy (2-3 minutes). Add powdered sugar, vanilla extract, and salt. Mix until creamy and lump-free.
  3. Crumble cooled cake into fine crumbs. Add cake crumbs to frosting mixture and blend until evenly moistened. Mixture should hold its shape when pressed.
  4. Scoop out 1-inch portions using a cookie scoop or tablespoon. Roll into balls, then gently shape into cones to resemble Christmas trees. Set on parchment-lined baking sheet. Chill in fridge for 20-30 minutes.
  5. In a microwave-safe bowl, melt white chocolate or candy melts in 30-second increments, stirring between each. Stir in green food coloring gel until desired shade is reached.
  6. Using a fork or dipping tool, submerge each chilled truffle in colored chocolate, letting excess drip off. Place back on parchment paper. Immediately sprinkle with holiday sprinkles and optional decorations.
  7. Use a piping bag or sandwich bag to drizzle additional colored chocolate if desired. Let truffles set at room temperature for 20 minutes, or in fridge for 10 minutes until coating is firm.
  8. Arrange truffles on a festive platter and serve.

Chill the cake mixture before rolling for easy shaping and dipping. Use gel food coloring for vibrant color. Work in small batches and decorate quickly while coating is wet. Truffles can be made gluten-free or dairy-free with substitutions. Store in airtight container in fridge up to 5 days or freeze up to 2 months.
