A quick and easy one-skillet meal featuring tender chicken, al dente rotini, and a creamy garlic sauce with a hint of Cajun spice. Perfect for busy weeknights or cozy dinners.

  • 1 lb boneless, skinless chicken breast, sliced into bite-sized pieces
  • 12 oz rotini pasta
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 12 tsp Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a bowl, toss the chicken pieces with 1 tbsp of olive oil, 1 tbsp of Cajun seasoning, and a pinch of salt and pepper until evenly coated.
  3. Heat a large skillet over medium-high heat. Add 1 tbsp of olive oil and 1 tbsp of butter. Once melted, add the chicken in a single layer. Cook for 4-5 minutes on each side until browned and cooked through. Remove the chicken and set aside.
  4. Reduce the heat to medium. In the same skillet, add 2 tbsp of butter and 4 minced garlic cloves. SautΓ© for about 1 minute until fragrant. Pour in 1 cup of chicken broth and 1 cup of heavy cream, stirring to combine.
  5. Bring the sauce to a gentle simmer and let it cook for 5 minutes, stirring occasionally. Stir in 1 cup of freshly grated Parmesan cheese until melted and smooth.
  6. Stir in 1-2 tsp of Cajun seasoning, adjusting to taste. Taste the sauce and add more salt or pepper if needed.
  7. Add the cooked rotini and chicken back into the skillet. Toss everything together until the pasta is evenly coated with the sauce and heated through, about 2-3 minutes.
  8. Top with freshly chopped parsley for a pop of color and serve warm.
