  • 12 ounces pasta (penne, rotini, or spaghetti)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1/2 cup Greek yogurt
  • 1/4 cup Parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 2-3 minutes until softened.
  3. Stir in minced garlic and cook for another minute, being careful not to let it burn.
  4. Add ground beef to the skillet. Break it up with a wooden spoon and cook until browned and fully cooked, about 5-7 minutes. Season with salt, pepper, and Italian seasoning.
  5. Mix in tomato paste and cook for 1-2 minutes to deepen the flavor.
  6. Pour chicken broth into the skillet and stir well, scraping up any browned bits from the bottom of the pan. Let it simmer for about 5 minutes until slightly reduced.
  7. Lower heat to medium-low and stir in Greek yogurt until the sauce is creamy. Add grated Parmesan and stir until melted and incorporated.
  8. Combine cooked pasta with the sauce and toss until evenly coated. Taste and adjust seasoning if needed.
  9. Serve immediately, garnished with additional Parmesan and chopped fresh parsley, if desired.
